Chicken Provenҫal with olives & artichokes

The perfect chicken recipe for a family feast, this hearty casserole packs a punch with a fragrant selection of herbs, tomatoes, olives and artichokes that evokes summer in Provence. Onc­­e you’ve done the prep, cook it in one pot in your oven and voila! To intensify the flavour marinade the chicken overnight, plus don’t forget a serving of new potatoes for some essential carb intake.

Carrot Cake

This very yummy scrummy carrot cake is a classic bake that will always go down a treat. It is simple to do with a one-layer sponge and a drizzle of icing to top it off. Just make sure you stock up on those key essential ingredients of carrots and oranges and dig out the cinnamon for a spicy zest tang to complete the taste. And if you can’t eat it all, this cake can be frozen for later (just add the icing after).

Sardine Bolognese

For a healthy meal rich in Omega-3, as well as Vitamin D and Protein, omit the usual minced beef in Bolognese in favour of sardines. This recipe has only five steps and can be rustled up in under an hour, including prep time! To finish, sprinkle with a generous amount of grated parmesan for a delightful Mediterranean dish.

Mango soufflé with vanilla ice cream

If you fancy something that will really put your culinary skills to the test then this light mango soufflé could be just for you. While soufflés have a reputation for being tricky to master, this one is deceptively easy – just don’t open the oven door!
